Overview

Rome is a city that rewards appetite: not only for food, but for beauty, contradiction, late nights, old rooms, and the kind of meals that make a place feel suddenly legible. Hosted by chef Ben Poremba, this journey enters Rome through the tables, markets, churches, palazzi, and neighborhood rituals that reveal the city beyond its obvious monuments.
The week moves between high and low, sacred and everyday, art and appetite. Expect classic trattorias, morning markets, private cultural access, Baroque interiors, a night visit to the Pantheon, and a day beyond the city in northern Lazio, where Renaissance architecture and regional cooking widen the frame.
What to expect: trattorias, market mornings, private palazzi, Baroque Rome, and Lazio beyond the city.

Your Host

Ben Poremba
Chef & Restaurateur
Ben Poremba builds restaurants as living parts of a city: places where food, design, memory, neighborhood life, and hospitality meet. Born in Israel and based in St. Louis, he is the founder of Bengelina Hospitality Group, whose restaurants range from acclaimed fine dining to neighborhood gathering places and artisan pizza.
His work is rooted in craft, cultural curiosity, and the belief that independent restaurants can help shape the character of a place. He is drawn to the people behind a city’s appetite: bakers, cooks, cheesemakers, artists, market vendors, and hosts whose daily work carries tradition forward.
In Rome, Ben leads this journey as a chef reading the city through its tables, rooms, rituals, and conversations.
